Our kitchen
One oven.
Ontario hardwood. Flour from Stratford,
vegetables from Niagara, and wood from Ontario orchards. Everything we serve passes through the fire, and nothing is hidden.

Ontario maple and oak, burning at 450°C. Every pizza bakes in about ninety seconds, turned by hand on the stone.
Out of the fire and onto your table while it's still crackling. The basil goes on last, so it never wilts.
